Directions for: Bison Short Ribs
Ingredients
Spice Rub1 Tbsp salt
1 Tbsp pepper
1 tsp cumin, ground
1 tsp coriander, ground
2 tsp guajillo peppers, ground
Ribs4 lb(s) bison short ribs, trimmed
2 Tbsp Spice Rub
2 cup red onion, finely chopped
cup garlic, minced
2 cup low-salt beef broth
1 cup dry red wine
cup balsamic vinegar
cup packed brown sugar
2 cup plum tomatoes, chopped
Directions
Spice Rub1. Mix all ingredients together.
Ribs1. Preheat oven to 300 degrees Fahrenheit.
2. To prepare ribs, heat a large Dutch oven coated with cooking oil over medium-high heat.
3. Sprinkle ribs with spice rub.
4. Add half of ribs to pan and cook for eight minutes or until browned, turning occasionally.
5. Remove ribs from pan and repeat procedure with remaining ribs.
6. Remove ribs from pan.
7. Add onions to Dutch oven and saut for eight minutes or until lightly browned.
8. Add garlic and saut for one minute. Return ribs to pan.
9. Add broth, wine, vinegar, sugar, and tomato. Bring to a simmer.
10. Cover and bake for approximately 2 to 3 hours or until tender.
