Directions for: Cod Fritters
Ingredients
3 onions, diced
6 ribs celery, diced
cup garlic
5 potatoes, peeled and diced
6 lb(s) cod scraps
1 Tbsp white pepper
kosher salt
cup evoo (olive oil)
cup dill, chopped
cup parsley, chopped
8 egg yolks
2 cup Panko breadcrumbs
1 cup mayonnaise
3 lemons, juiced
Directions
1. Saute onions, celerry and garlic in 2 tablespoons of oil until soft, transfer to half sheet pan to cool.
2. Blanch potatoes in salted water until almost soft. Transfer half to sheet pan to cool. The other half mash and reserve to cool.
3. Toss scraps with pepper, salt and oil. Bake in convection oven until cooked thoroughly but not browned. Reserve to cool.
4. Add all ingredients together in large mixer.
